Apple & Candied Ginger Crisp

Apple & Candied Ginger Crisp!  Sweet, spicy, chewy bits of candied ginger packs some serious oomph into this classic fall dessert!  It has the perfect ratio of crisp topping to fruit filling! Happy Fall baking, everybody!



For the Crisp Topping:

3/4 cup all-purpose flour

1/2 cup sugar

1/4 cup light brown sugar

1/2 cup + 2 Tablespoons regular rolled oats

1/4 teaspoon sea salt

3/4 teaspoon ground cinnamon

1 teaspoon vanilla extract 

1/2 cup unsalted butter, at room temperature

1/2 cup chopped walnuts

For the Apple Filling:

7 large apples, peeled, cored, and thinly sliced

1/4 cup light brown sugar

2 Tablespoons fresh lemon juice

1 teaspoon vanilla extract 

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/3 cup minced candied ginger

splash of Cozy Spiced Apple Cider or regular apple cider


  • Preheat the oven to 350°. Lightly butter a 2-Quart casserole dish or baking pan. Set aside.           
  • To assemble the crisp topping:
  • Combine the flour, sugars, oats, salt, and cinnamon in a large bowl.  Add the butter, using your fingertips pinch the butter into the flour mixture until coarse, moist crumbs form.  Drizzle the vanilla extract over the top and pinch to combine. Add the walnuts and toss them with the flour mixture until evenly distributed. Place in the fridge while you assemble the apple mixture.      
  • For the Apple Mixture:
  • Combine all of the ingredients in a large bowl. Pour into the prepared baking pan. Top with the crisp mixture—Bake for 40-50 minutes.  The crisp will be golden brown, and the apple mixture will be bubbling around the edges when done. Remove from the oven and enjoy hot or at room temperature, but always with a giant scoop of vanilla or pumpkin ice cream!


  • My favorite apples for this crisp are Macintosh.  That’s what my mom always used, and I’ve continued with the tradition! Any type of baking apple is suitable.
  • If you have leftover Cozy Spiced Apple Cider, it’s lovely added to the fruit mixture. Regular cider works, too. Or, you can leave it out altogether.  I like the added moisture and flavor it adds!
  • Candied Ginger is typically found either in the baking aisle or may be found in the section that is for bulk tubs of nuts, seeds, dried fruits, etc.
