Description

Beef and Bacon Chili is for all you meat lovers out there! This chili is rich, thick, and satisfying! It’s filled with lean ground beef, chopped bacon, red kidney beans, and a slightly spicy tomato base! This bowl is sure to become a crisp Fall night favorite! Perfect for Game Day, too!

Ingredients

1 Tbsp extra virgin olive oil

1 pound lean ground beef

1 cup chopped yellow onion

1 cup chopped red bell pepper

2 cloves of garlic, minced

1 Tbsp Dutch process cocoa

1 packed Tbsp light brown sugar

1/2 tsp sea salt

2 tsp smoked paprika

1/4 tsp onion powder

1 tsp chipotle chili powder

2 tsp ancho chili powder

1/2 tsp dried oregano

1 tsp ground cumin

1/4 tsp ground coriander

1 Tbsp soy sauce

15 ounce can of tomato sauce

15 ounce can of red kidney beans, drained and rinsed

3 strips of cooked bacon, chopped

1 &1/2 cups water

1 Tbsp lime juice

Optional garnishes:

diced avocado

shredded cheddar cheese

toasted pumpkin seeds

chopped cilantro

sliced black olives

sour cream 

crushed tortilla chips {my fave are the Jalapeno & Lime from Late July! So good!}


Instructions

Combine the salt, brown sugar, cocoa, and spices in a small cup. Set aside. Measure the 1 Tablespoon of olive oil into a large stock pot or dutch oven and heat until hot over medium heat.  Add the ground beef and cook until almost all the pink color is gone.  Break the meat up with a wooden spoon to ensure even cooking.  When the meat is almost completely cooked through (about 8-10 minutes) add the veggies and garlic.  Cook until the veggies are tender (about 5-6 minutes longer). Add the spice mixture to the meat and veggies.  Stir to coat the meat mixture with the spices. Add the soy sauce, tomato sauce, kidney beans, water and chopped bacon to the pot, and stir well.  Cover the pan, and bring it to a simmer.  Simmer for 10 minutes, covered. Uncover the pan, and simmer an additional 5 minutes. Remove the pot from the heat, and stir in the lime juice.  Garnish with your choice of toppings. Scoop and enjoy!


Notes

Beef and Bacon Chili is a great make-ahead dish! It tastes even better made the day before serving! Also, it freezes well, for up to three months!
